The viral Dubai chocolate trend reached our household as well. While we typically don’t follow every culinary craze, we were captivated by the reactions of people trying the chocolate on TikTok, so we decided to give it a try ourselves. Unsurprisingly, we loved it! We wanted to take elements from the chocolate and incorporate them into soft, delicious rolls. First, we prepared a classic, soft roll dough. Next, we made a filling using kadai and pistachio spread. Finally, before serving the rolls, we spread a thick layer of homemade, luxurious chocolate cream on top. To finish, we sprinkled chopped pistachios over the cream, and you’re in for a real treat!

Essential ingredients

For this recipe, we mostly need ingredients already in your pantry and some of the ingredients you can get in a store. Read more about the essential ingredients in the following paragraph, or check the full recipe below:

Dough - prepare the soft rolls using flour, sugar, vanilla paste, milk, yeast, eggs, and butter. Knead into a smooth dough, leave to proof until doubled, then use.

Kadaif - to make the filling, we use a well-known Middle Eastern ingredient called Kadaif. It's used in various desserts, especially to make the viral Dubai chocolate.

Pistachios—This recipe uses pistachios twice. We need the pistachio spread and chopped pistachios for an extra-deep flavor. Choose your favorite pistachio spread.

Chocolate—We recommend using semi-sweet or dark chocolate to prevent the dessert from becoming overly sweet. We combine the chocolate with the whipping cream.

Storing

It is best to serve these Pistachio Chocolate Rolls on the same day, especially because of their soft interior, crunchy and creamy filling, and rich chocolate topping. 

However, if you have any leftovers, keep them at room temperature for up to two days.

METHOD

  • dough

    First, make the dough. In a bowl of a stand mixer fitted with a dough hook, combine flour, sugar, vanilla paste, salt, milk, yeast, and eggs. Knead for 8 minutes using a stand mixer or for 12 minutes by hand. Add the butter cut into small cubes, and knead until the butter is completely incorporated, for about 5 minutes. Cover the bowl with cling film and set aside to proof at room temperature for 1 hour—1 1/2 hours or until doubled in size.

    Place a large skillet over medium heat. Add butter. When it melts, add kadai. Pan-fry for 4 - 6 minutes while stirring or until golden brown and crunchy. In a food chopper or blender, mix together pistachios and sugar to get a thick paste. Transfer to a bowl and stir in the pistachio spread and pan-fried kadai to get a gorgeous filling.

    Lightly dust the working surface with flour and roll the dough into a 35 cm 14-inch long rectangle, about 0.5 cm or 1/8-inch thick. Spread the filling over the dough, leaving a 1-inch (3 cm) margin at one long side of the dough. Start rolling the dough up, starting from the longer side (where the edge is), and place the seam side down, making sure to seal the edges of the dough. Cut the dough into 12 rolls. Grease a 30 cm x 20 cm (12-inch x 8-inch) baking dish with butter. Place the rolls with the cut side up in the prepared baking dish, ensuring enough space between them. Cover with cling film or kitchen towel and set aside to proof at room temperature for 1 hour or until doubled in size. Place a rack in the middle of the oven and preheat it to 180 °C / 350 °F.

    Add the chocolate chips (or chopped chocolate) to a bowl. Add butter and a pinch of salt. Pour hot whipping cream over the mixture and stir into a smooth cream. Place it in the fridge for one hour, then place it at room temperature until needed.

  • bake

    Place the Pistachio Chocolate Rolls into the preheated oven on the middle rack. Bake for 25 - 30 minutes at 180 °C / 350 °F. Remove from the oven and cool at room temperature.

  • Pistachio Chocolate Rolls

    Spread the prepared chocolate cream over the rolls, sprinkle with chopped pistachios, and then serve.
